PDF Editing and extraction to Text

I have pdfs of almost 35 books , so what I need is I just want Chapter's name , headings and subheadings mentioned in the chapter , bold letters , and captions below any diagram. Like this i need for all the chapters. So bascially first is chapter name , then headings in it , and subheadings mentioned within it , bold letters , captions below diagrams. Thats all i want . Each pdf has nearly atleast 100 pages. ( I dont want paragraphs, just headings and other stuffs as mentioned earlier )
